"Pretend-Birthday" Lunch
S was a "Summer Baby" - which means that she usually celebrates her birthday in the company of mostly adults and a few young cousins. With this in mind, her teacher and I decided to throw her a "Pretend Birthday" lunch in school so she could get to celebrate her special day with all of her classmates/friends. The Kindergarten Class consists all of 6 kids, so the 3 different baguette sandwiches I made yesterday morning was more than enough for everyone.
The first one was loads of Smoked Turkey/Swiss Cheese/Lettuce/Tomato with Pesto Dressing. For those who want to try a different twist from regular mayonnaise, Pesto Dressing is a mixture of store-bought mayo and fresh Spinach/Pesto Sauce. Really tangy good...

Looks totally yummy...sigh
Ain't it great to be a kid? You can have your cake... and eat it, too!
i totally hear ya! my 4-yr old is born in the last week of October so having an outdoor party when it's usually in the 50s is out of the question. so, i invented this tradition (and now most of my friends and other moms in my area are following suit)...
for his first birthday party, i held it in August. nice, warm weather. next birthday was in september. third was in september again. fourth was last april. then, on his real birthday, i bring cookies and cake at his school and i cook a family birthday dinner at home. anyway, who says they can't celebrate their birthdays anytime of the year?
So true... I Love Parties - and ANY excuse to throw one is good enough for me.
