Avocado-Macapuno Ice Candy
S has a penchant for Ice-pops, but the taste of store-bought ones is nothing compared to the homemade ice candy that I used to make back home. I wanted to let her have a taste of my special childhood Summer treat, so we devoted a couple of hours making Avocado-Macapuno (coconut sport or mutant coconut) Ice Candy. Ingredients:
1. 1/2 cup heavy cream
2. 1 1/2 cup whole milk
3. 3 avocados (Haas)
4. 1 cup sugar
5. 1 tsp. lemon extract
6. Macapuno
Place the first 5 ingredients in a large bowl or blender. Mix till it becomes smooth and creamy, leaving some avocado bits for consistency. Pour into plastic ice candy wrappers (Thanks to my sis in Iloilo who sent me hundreds) or plastic ice cube containers. Drop 2-3 strands of Macapuno into each plastic bag before tying them tightly. Makes 15 - 17 ice candies (not counting the one that S sampled before we even froze them).
For best results, freeze overnight.
