Cumin Coleslaw



Ingredients:

1 jalapeno pepper, discard seeds, chopped finely
1/2 head of red or green cabbage, shredded
2 medium carrots, shredded
fresh parsley, chopped
2 tbsp. canola oil
juice of 1 lime
dash of cumin
pepper
salt

Combine all ingredients and chill at least an hour before serving.




Great as a light side dish.
Pair it with fried fish or baked chicken (shown).
